Vegan Chocolate Tofu Pudding – An Easy, High Protein Twist on a Childhood Classic!

This vegan chocolate tofu pudding is one of those recipes that feels like a throwback dessert, yet secretly loves you back. Creamy, rich, and spoon-licking good — without dairy, and made with simple pantry ingredients.

Equipment

  • Food Processor or Blender
  • Measuring Spoons

Ingredients
  

  • 300 g soft or silken tofu
  • 5 TBSP cocoa powder
  • 1/4 cup maple syrup
  • Splash of vanilla extract
  • Pinch of salt
  • OPTIONAL 50g melted vegan chocolate

Instructions
 

  • Add all ingredients to the bowl of a blender or food processor. Blend until fully incorporated.
  • Pour into prepared dish(es) and chill in fridge for a minimum of 30 minutes.

Notes

The melted chocolate here is optional – adding it helps this become more of a ‘mousse’. 
The pudding may separate in the fridge after a day or two – simply give it a stir before eating and it’s good as new!
